Pita Bread Oven Product Details

Originally designed as high production flatbread ovens, the Dual Burner Bistro ovens are also well-suited for many other stone hearth cooking applications. The ovens feature two adjustable gas-fired radiant burners (one on each side), and a burner disable switch allows operation with only one burner for increased flexibility. Based on our Bistro Line 4343, 4355 or 4836 footprint, the Pita Bread Oven features a 3-inch thick cast ceramic hearth and dome, allowing it to consistently maintain temperature and performance. Featuring a painted black steel stand and a handsome, stainless-wrapped oven chamber, this Bistro can accommodate all manner of facade and design options. For easily repeatable production without sacrificing versatility, the Pita Bread oven is an excellent choice.

Installation Info

The Wood Stone Pita Bread oven should have a minimum 1-inch clearance to combustibles from all sides, 6-inch clearance to combustibles from the top, and 6-inch clearance from the exhaust transition and flue collar.

Any facade wall built 6 inches to either side of the doorway and above must be of non-combustible construction. If building a facade that will contact the oven, use completely non-combustible materials. Please note that standard Drywall (or Sheetrock) is considered a limited combustible Any walls perpendicular to the front of the oven in the area 30 inches to either side of the doorway and 36 inches in front of the oven should have a non-combustible surface.

This oven should be installed on a non-combustible floor surface. For use only on noncombustible floors. The non-combustible floor surface must extend 36 inches in front of and 30 inches to either side of the oven doorway.

Learn how to facade your Pita Bread oven! There are a virtually unlimited number of design possibilities available when integrating a Wood Stone oven into your kitchen. Because of their rectangular shape, Pita Bread ovens are often incorporated into a kitchen design by applying facade materials, such as tile, stone or brick, directly onto the oven exterior.

Storage Boxes

Wood Stone’s Storage Box is constructed of stainless steel. It slides easily into the oven stand and is easily removable for service access. The installed box rests on the oven stand, and the face of the box is flush to the base of the stand.

How much gas does a Wood Stone oven use?

The gas usage will vary greatly depending on your oven model, fuel type, usage, and even what you are cooking. However, as a reference point, a WS-MS-5-RFG-IR using natural gas rated at 188,000 BTU/hr (1.88therms/hr) with a temperature range of 550F-600F (285C-315C), with two hours of heat up time and four hours of cooking, might average around 675,000 BTU daily (6.75 therms/day or 1.125 therms/hr).

What is the difference between fuel types – is wood-fired really better?

Countless blind taste tests have confirmed for us that there is little appreciable difference in flavor.  In our opinion, it is open flame (of any kind) and the stone itself that create the wonderful flavor profiles that have long been associated with wood fire.  However, the theater and marketing power of a live wood fire cannot be underestimated.

During the Warranty period, you must contact Wood Stone directly for service.  We will arrange for service with one of our authorized service agents.  After the warranty period, you are free to utilize whichever service agency you prefer.

What is the average lead time on a piece of equipment?

Wood Stone equipment is usually built to order.  For a price quote or lead time estimate, please request a quote through a restaurant equipment dealer.

Wood Stone does not sell equipment directly to end users. Our products are available through restaurant equipment dealers. If you are not currently working with a dealer, please contact the Wood Stone factory representative closest to you, and they will introduce you to one.
