Summer Vegetable Tian

baguette, processed into ¼” or smaller pieces |
1 small | clove garlic, pressed |
2 Tbs. | olive oil |
2 medium | zucchini, thinly sliced into rounds |
½ medium | red onion, sliced thinly into half-moons |
2 sprigs | fresh oregano |
Heat your oven to around 550°F – 600°F, then turn your flame down to 3.
Toss the bread crumbs with the garlic and olive oil.
Spread on a sheet tray and sprinkle with salt.
Bake until lightly toasted.
Drizzle olive oil into the bottoms of 2 small baking dishes.
Cover the bottom with a light layer of bread crumbs.
Arrange the zucchini slices and onion into a decorative pattern.
Drizzle with olive oil. Salt and pepper. Sprinkle a few oregano leaves over the top.
Place the dishes by the wall of the oven, farthest from the flame. Cook for around 20 minutes, turning once during the cook time.
