Summer Vegetable Tian

1 demi

baguette, processed into ¼” or smaller pieces

1 small clove garlic, pressed
2 Tbs. olive oil
2 medium zucchini, thinly sliced into rounds
½ medium red onion, sliced thinly into half-moons
2 sprigs fresh oregano

Heat your oven to around 550°F – 600°F, then turn your flame down to 3.

Toss the bread crumbs with the garlic and olive oil.

Spread on a sheet tray and sprinkle with salt.

Bake until lightly toasted.

 

Drizzle olive oil into the bottoms of 2 small baking dishes. 

 Cover the bottom with a light layer of bread crumbs.

Arrange the zucchini slices and onion into a decorative pattern. 

Drizzle with olive oil. Salt and pepper.  Sprinkle a few oregano leaves over the top.

 

Place the dishes by the wall of the oven, farthest from the flame.  Cook for around 20 minutes, turning once during the cook time.
