Cedar Plank Tofu – 2 Ways

Cooking tofu on a cedar plank is a great way to infuse it with the lovely taste of cedar.
Creating a wonderful texture – moist from the steam, with a little crisp on top.

Heat your oven to a moderate temperature between 400°F and 500°F.

To prepare tofu:

Drain liquid from 1 block of extra firm tofu.  Place a weight (a can placed inside a baking dish works fine) on top of the tofu to press out any extra liquid.

Slice the prepared tofu.

At this point, the tofu can be flavored however you like.  Here’s what I did:

  1. To really taste the cedar flavor, keep it simple. I drizzled the slices with olive oil, flake salt, and fresh cracked pepper
  2. For a bigger flavor punch, I mixed together: 2 Tbsp. maple syrup, 2 Tbsp. soy sauce, ½ tsp. fish sauce, 1 clove garlic – smashed, 2 tsp. Calabrian chilis, 1 tsp. rice wine vinegar.
    **Let your tofu soak for at least 30 minutes in the marinade.

Soak cedar planks for 20 to 30 minutes.

Place the tofu slices on the plank.

Turn you flame to 3 and place the plank close to the flame.  Cook until the edges of the tofu begin to brown.  Turn the plank halfway through cooking to even out the cook.
