“Wood Stone”: At the top of Grant’s list
Bringing with him a wealth of culinary experience (being a “Young Scottish Chef of the Year” winner, and holder of a prestigious “AA Rosette”), Byzantium’s Head Chef, Grant MacNicol, has been leading the ambitious team at his Dundee restaurant since its launch in October 2009.
Having firmly established that award-winning Mediterranean-style eatery, the most recent focus of Grant’s expertise is the Byzantium’s newly opened restaurant at St. John’s Place, Perth.
Grant discussed his experience of Wood Stone:
“For such a significant financial investment I was initially concerned that the oven would be limited in its function and would restrict my cooking style, but I have to thank Jestic’s Executive Chef and Product Director, Michael Eyre, who not only won me over but also opened my eyes to the possibilities that the Wood Stone could offer. I’m now converted to the extent that I feel my style is in fact complemented by the Wood Stone and whenever I’m preparing new menus I always consider from the outset how I can utilise it.
When designing and specifying the kitchen for our new Perth restaurant, the Wood Stone was the first item on the list. With its superior performance and impressive appearance it’s the focal point of the workspace, and allows the customers to watch the preparation of their meal in full flow.”
