Cherry Chocolate Skillet Cookie

Need something to warm you up during these chilly winter evenings? We highly recommend a skillet cookie…with a little bourbon 😉.
INGREDIENTS
- 8 oz. butter, softened
- 2/3 cup sugar
- 1 cup packed brown sugar
- 2 large eggs
- 1 Tablespoon bourbon
- 1 teaspoon salt
- 1 ½ teaspoons baking soda
- 2 ½ cups all-purpose flour
- 1 cup bittersweet chocolate chips
- ½ cup milk chocolate chips
- ½ cup dried tart cherries
METHOD
- Heat your Wood Stone to a moderate temperature – between 375°F and 400°F
- Put the butter, sugar and brown sugar in the bowl of a stand mixer and beat on medium speed until the mixture looks fluffy.
- Add the eggs one at a time, beating until incorporated
- On low speed, mix in the bourbon, then the salt and baking powder.
- Add the flour, mixing to combine.
- Add the chocolate chips and cherries, mixing to combine.
- Spread the cookie dough into a 10” or 12” skillet.
- Put the cookie in the center of your oven and turn the flames to 2.
- Bake until the edges are set and center barely moves when you shake the pan.
10’” skillet: 50 – 60 minutes
12” skillet: 30 – 40 minutes
