Cherry Chocolate Skillet Cookie

Need something to warm you up during these chilly winter evenings? We highly recommend a skillet cookie…with a little bourbon 😉.

 

INGREDIENTS

  • 8 oz. butter, softened
  • 2/3 cup sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 Tablespoon bourbon
  • 1 teaspoon salt
  • 1 ½ teaspoons baking soda
  • 2 ½ cups all-purpose flour
  • 1 cup bittersweet chocolate chips
  • ½ cup milk chocolate chips
  • ½ cup dried tart cherries

METHOD

  1. Heat your Wood Stone to a moderate temperature – between 375°F and 400°F
  2. Put the butter, sugar and brown sugar in the bowl of a stand mixer and beat on medium speed until the mixture looks fluffy.
  3. Add the eggs one at a time, beating until incorporated
  4. On low speed, mix in the bourbon, then the salt and baking powder.
  5. Add the flour, mixing to combine.
  6. Add the chocolate chips and cherries, mixing to combine.
  7. Spread the cookie dough into a 10” or 12” skillet.
  8. Put the cookie in the center of your oven and turn the flames to 2.
  9. Bake until the edges are set and center barely moves when you shake the pan. 

    10’” skillet:  50 – 60 minutes

    12” skillet:  30 – 40 minutes
