Wood Stone Pizza Sauce
The purest and most traditional Pizza Sauce is composed simply of high-quality ground tomatoes. The tweaking begins with the addition of a bit of salt. Additional ingredients commonly added include garlic, basil, oregano, anchovy paste, cayenne pepper, sugar, salt, etc… It’s really your call.
When we are gearing up to make traditional pies in the Wood Stone Test Kitchen, this is our standard sauce.
Ingredients
- #10 can of high quality canned tomatoes – drain and reserve a couple cups of liquid. We use Stanislaus 74/40
- 1 Tbsp fresh garlic – minced
- 1 Tbsp dried basil or herb of choice
- 2 tsp Kosher Salt
Preparation
Blend with stick blender until desired consistency is reached. Add some of the reserved liquid if it seems too thick.

If you are making Thai Pizza, peanut sauce is appropriate. Barbeque sauce is appropriate for BBQ Chicken or Pulled Pork pizza. A sauce of Fig Jam and reduced Chianti can make a nice sweet backdrop for a Potato, Rosemary and Prosciutto pie. Crème Fraiche or heavy cream is a great base for sweet or savory pies. A simple brush of garlic infused Olive Oil can be a nice sauce substitute for many pies. Whatever sauce you use, make sure it pairs well with the topping combinations with which you use it. Remember, it’s not the star of the show, just a solid supporting cast member.
