Jeff Galvin of La Chappelle in London, and Wood Stone

A recent article by Stephan Chomka has Jeff Galvin, award winning chef and owner of La Chappelle in London, singing the praises of his Wood Stone oven (WS-MS-6-RFG-W).

I had never worked with a wood-fired oven before so I thought it was a bit of a gamble. People love the romance of owning one, but they end up never using them, which means they become the most expensive knife cabinets in the world. Our oven is 6ft and there was a worry that, because it was such a big piece of kit, we wouldn’t use it but now we wish we’d put a bigger one in. It’s great because they never drop their temperature – they stay at around 160°C (320°F) even when they are turned off at night. We make bread in it early in the morning, then flatbreads throughout the day as well as using it for roasting vegetables. It is gas-fired as well but we predominantly use wood because of the high cost of gas. It burns about a sack of wood a day at €6 a bag, which represents very good value for the money.
