Charred Fruit and Fennel Fraiche Recipe
A couple days ago, the Wood Stone Test Kitchen churned out this new, delicious recipe! Dessert anybody?
Fennel Crème Fraiche
1 Cup Sour Cream
1 Tbsp Heavy Whipping Cream
1 tsp Fresh Squeezed Lemon Juice
2 tsp Minced Fennel Frond
Combine all ingredients. Leave at room temperature for 30 min to 1 hour. Chill.
Procedure for Charred Fruit:
Peel an orange and slice in half horizontally. Liberally sprinkle the flat edge with sugar. Preheat a cast iron pan, add 1 tsp clarified butter. Char oranges sugar side down for 30 seconds, until caramelized. Serve with fennel crème fraiche. Garnish with greenery and (optional) sprinkle with infused sugar of any flavor (clove and lemon work great).
