Cooking Education: Pizza Rotation for 1 Pizza
With a basic understanding of a few key points, cooking pizzas in a Wood Stone Fire Deck Series stone hearth oven is easy.
The following example represents a Fire Deck 8645 gas-fired oven, although the concept can be adapted to any Fire Deck Series oven. Pizzas shown are approximately ten to twelve inches in diameter.
|1. Position pizza in the Raw Landing Zone. While our illustration shows the pizza towards the back of the oven, it can alternatively be placed more towards the front.|
|2. Let pizza bake until the leading edge is sufficiently colored and caramelized.|
|3. Rotate the pizza’s less-baked side towards the burner flame while positioning in the Finishing Zone.|
|4. Bake until crust is sufficiently colored and caramelized on the top and bottom. Then remove the finished pie.
