Roasted Fennel Relish
Serves several as a topping on grilled bread or chicken or fish
We discovered this one day as a base for sautéing mussels, and have yet to discover all the delicious applications for this relish.
Ingredients:
- 2 C roasted Sweet Onion, ½ inch dice
- 1 C Fresca
- 1 C roasted fennel, ½ inch dice
- 1ea serrano pepper fresh sliced – not seeded
- 1 T fresh minced thyme
Method:
- Combine all in a bowl. Use as a topping for crostini, pizza, seafood, or chicken.
