Wood Stone Ovens

Makes 1 1/2 cups When Roma tomatoes are in season, this is our favorite concassé, adding a burst of flavor to some of our favorite dishes.


  • 1 1/2 cups roma tomatoes, stemmed, cored, and diced
  • 1 1/2 Tbsp. sherry vinegar
  • 1 Tbsp. extra virgin olive oil
  • 1 tsp. garlic, minced
  • 1/2 tsp. Searing Seasoning


  1. Gently stir all ingredients together until well incorporated. Store in the refrigerator and stir well before using.
